The Made in Oklahoma Alliance prepares new recipes for 2022

Frittata fritters are made by Alliance Made in Oklahoma.

After the heaviness of holiday food, let’s ease things up.

Start the day with the perfect frittata for brunch on Sunday and the following Monday. It’s also great for packing in a lunch box for school or work.

Filled with JM Mushroom, Scissortail Farms Spinach and Bar-S Bacon, mix and match your favorite herbs and vegetables with our base of Hiland Heavy Whipping Cream and Hansen’s Eggs. They bake directly in a muffin pan, which makes cleanup easier, as you can take them out right away.

Favorite frittata

• 12 Hansen eggs

• 1/4 cup Hyland heavy whipping cream

• 1 teaspoon Daddy Hinkle’s Original Seasoning

• 1 tablespoon scissortail farmer’s basil

• 1/4 cup shredded mozzarella cheese

• 1/2 cup chopped scissortail farms spinach

• 1/2 cup shredded mushrooms

• 1/4 cup grated and chopped roasted red pepper

• 1/4 cup chopped Bar-S bacon (optional)

Preheat oven to 350°F, line a 12-piece muffin pan with muffin liners and spray with non-stick spray. The silicone muffin pan also works well.

Combine eggs, cream and spices with a whisk until the eggs are completely whipped. Whisk mozzarella cheese. Fill mixture between 12 cups, filling about to full. You may have enough extra batter to make a few extra muffins. Top with spinach, mushrooms, red pepper, and bacon (if desired). You can customize it to everyone’s taste using your favorite vegetables, cheeses and meats.

Bake for 16 to 18 minutes, shaking the center to see if the egg has drained. Let it cool for a few minutes before removing it from the cups. You can eat them warm or cold, then wrap them separately and store them in the refrigerator or freezer.

Coconut Crispy Chicken Tender

• 1 Hansen egg

• 1 tablespoon Suan . Scotch Bonnet pepper jelly

• 1 cup shredded coconut

• 1/2 cup Shawnee Mills All-Purpose Flour

1/2 teaspoon salt

• 1/4 teaspoon black pepper

• 1/4 teaspoon garlic powder

• 1 1/2 pounds of boneless, skinless chicken tenders

• 1/3 cup melted Broom butter

Preheat oven to 400°F, in shallow bowl, whisk egg jelly and pepper together. In another shallow dish, combine the coconut, flour, salt, pepper, and garlic powder.

Dip the chicken fillets first in the egg and then in the coconut, covering each side well.

Put the chicken on a baking tray. Sprinkle with butter (this gives a nice color to the chicken). Bake for 25 minutes or until browned and fully cooked through. Flip the chicken halfway through the cooking time.

• 1 package of Shawnee Mills Pizza Crust Mix

• 1 jar of Lover’s Old World Pizza Sauce

Meat lovers

• 4 slices of Bar-S Bacon, cooked and crumbled

• 1/4 pound of Greer Ranch House sausage, cooked and drained

• 1 joint Mountain View Meat Company smoked sausage, cooked and warm

• 1/2 cup shredded mozzarella cheese

• 1/3 cup sliced ​​mushrooms

• 1 fully cooked chicken breast, cut into strips

Prepare Shawnee Mills pizza crust according to package directions. Shape the dough into three dough balls. On a large baking sheet, shape each dough ball into a small pizza, pressing to shape the edges into a crust. Heat the oven to 400 degrees Fahrenheit.

To make each pizza, spread 2 tablespoons of Louvera sauce (or BBQ sauce for barbecue pizza) over the dough. Add the layer. Bake for 15-20 minutes or until cheese melts and crust is golden.

• 1 Pack of Stone Sisters Organic Happy Pizza Crust

• 1/4 cup cherry tomatoes, halved

• 1/4 cup chopped red onion

• 2 cups of shredded Lovera Caciocavera cheese

• 2 tablespoons of oregano from scissortil tail farms

• 2 tablespoons chopped Scissortail Farms . basil

Put the ingredients on top of the pizza dough. Bake at 400 F in a regular oven or 375 F in a convection oven for 10 to 12 minutes or until set.
