Ray Drummond’s chicken and rice recipe has some easy shortcuts
Drummond showed how to make an easy Tex-Mex Chicken and Rice recipe in an episode of leading women. “There is nothing in the world that beats a single meal,” she explained. Drummond promised that her one-pan recipes “will make your cooking life complete.”
An easy Mexican chicken and rice recipe that offers some quick time savers. “The shortcuts in this dish are huge, if that makes sense,” she said. “Such an easy dish – you won’t believe how easy it is to put it all together.”
She added, “Very fast and you only get one dish dirty, and that’s the whole point of one skillet dish – fewer dishes.”
Drummond began by adding onions and garlic to the olive oil, and heated them in a skillet. She added a lot of Tex-Mex flavor with chili powder, cumin, cayenne pepper, turmeric, and pepper. leading women The star stirred everything together for three minutes. “I want to stir it up so the spices start to brown a bit and the onions cook off,” she explained.
Drummond added a can of tomato sauce and a can of diced tomatoes and green peppers, then flipped everything together.
Drummond likes to use rice in the microwave to make the dish easier

Her easy choice for rice was something she called “a bag of rice.” Drummond explained, “This is microwaveable rice. It’s all ready to go. And I’m telling you, this stuff is taken for granted. I think microwave rice in the bag got a bad reputation once upon a time.”
She added, “But there are so many varieties, and for that, I use like my organic microwave brown rice.”
Drummond shared another easy shortcut to her recipe: shredded roast chicken. “This will end up being a very generous chicken and rice dish. But, you see, there’s absolutely nothing fancy. And you don’t have to use ready-made rice. But, to me, that’s kind of hilariously fun for this one-pot dish – just popping two bags of rice and tossing them in a pan with all these other ingredients in it.”
I mixed everything together and cooked the mixture for three minutes to allow the rice to absorb the flavors. “And it will only turn into some measure of magic – just wait,” Drummond promised.
Food Network host sprinkle chopped cilantro on top, spread ingredients in an even layer, and sprinkle pepper cheese on top. Drummond added the lid, reduced the heat to low, and melted the cheese for a few minutes.

When Drummond lifted the lid, she revealed a delicious melted cheese rice and chicken dish.
“That’s really cool because, usually, when I make this Mexican rice dish, I don’t put chicken in it and it’s a great side dish but with chicken, it’s just a nice one-pot dinner and you can eat it straight to the table.” “I like to put a lot of cilantro on top.”
“That’s one beautiful wonder out there,” Drummond said.
